This meatloaf is a classic, no-frills comfort dish. It’s topped with a simple TomaNo ketchup glaze that caramelizes as it bakes, adding a tangy-sweet finish. The texture is tender but holds its shape well, making it ideal for slicing and serving with mashed potatoes or vegetables.
Ingredients:
1 lb ground beef (or a mix of beef and pork)
1 egg
1/2 cup breadcrumbs
1/2 cup finely chopped onion
1/4 cup milk
1/2 cup shredded parmesan cheese
2 tbsp TomaNo ketchup (for inside the loaf)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder (optional)
For the glaze:
1/4 cup TomaNo ketchup
1 tbsp brown sugar (optional for a touch of sweetness)
1 tsp mustard (optional for tang)
Instructions:
Preheat oven to 350°F (175°C).
In a large bowl, combine ground meat, egg, breadcrumbs, onion, milk, parmesan cheese, TomaNo ketchup, salt, pepper, and garlic powder. Mix until just combined—don’t overwork it.
Shape into a loaf and place in a baking dish or loaf pan.
In a small bowl, mix glaze ingredients and spread over the top of the meatloaf.
Bake for 55–65 minutes, or until internal temperature reaches 160°F.
Let rest for 5–10 minutes before slicing.
