Savory TomaNo Soup

This soup offers everything necessary for warmth, comfort, and satisfaction. It's brimming with vegetables, soul-nourishing, and free of inflammatory ingredients.

Serve with a grilled cheese sandwich or warm, crusty bread!


INGREDIENTS

 

  • 1 TB olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, chopped

  • 2 medium beets, peeled and diced

  • 1 cup cubed butternut squash

  • 1 small sweet potato, peeled and cubed

  • 2 cups chicken, or vegetable broth

  • 1 cup TomaNo sauce

  • 1 TB italian seasonings blend

  • 1 tsp pepper

  • 1/2 tsp salt

 

DIRECTIONS

  1. Heat oil in a large saucepan over medium heat


  2. Add diced onion and sautee until onion begins to soften


  3. Add garlic and sautee for about 30 seconds, until fragrant


  4. Add the beets, butternut squash and sweet potato. Cook vegetables until they begin to all soften, about 7-8 minutes


  5. Add in broth, TomaNo sauce, seasonings, salt and pepper


  6. Cover, reduce heat to low, and simmer about 30 minutes


  7. After simmering, remove pot from heat and puree soup with an immersion blender, until you reach a smooth consistency
